Vegan Lasagne with Soy

It's time to share my extremely great recipe - Vegan Lasagne. I was even thinking about not sharing it on my blog and write it only in my book, which I'm writing write now, but here it is. A gift for all my blog readers. It was the most delicious lasagne of all regular, vegetarian and vegan I have ever tried. And one more bonus for it - it's super simple. If you are here, because you are really lazy vegan, but love to eat delicious, you will like it just as much as I do. :)





My fiance said it's the most delicious lasagne he has ever tried - compliment not only for me, but also for vegan diet. :)




Ingredients: 

For soy sauce:
  • 100g / 3.5oz soy mince
  • 1/2 carrot
  • 1 celery stalk
  • 1 onion
  • vegetable oil
  • 8-10 tbsp tomano sauce (at least 50% tomato paste; if you need you can use more)
  • 1 clove garlic (optional)
Spices for soy mince to boil:
salt, garam masala, chicken spices (garlic powder, red bell pepper powder, mustard seeds)

Spices for soy mince to cook:
chicken spices (garlic powder, red bell pepper powder, mustard seeds), salt, pepper, red bell pepper powder, dried vegetables (optional)

Ingredients for bolognese sauce:

4 tsp coconut oil
200ml / 6.8oz coconut cream
200ml / 6.8oz water
1/2 tsp salt
1/2 tsp nutmeg
pepper
6 tsp of gluten free flour (I used 3tsp oat flour and 3tsp rice flour)

Method:

Prepare the soy mince
  1. Boil the water, add all spices and soy, cook for about 10-15 minutes
  2. Chopp carrot, onion and sallery
  3. Preheat the pan to medium heat, add vegetable oil, when the pan is hot add onion, carrot and sallery, stir, cook for few minutes.
  4. Add soy mince to the pan, add all the spices, mix everything well and cook for 3-5 minutes
  5. If you see it's needed, pour some water into your soy sauce
  6. Add tomato sauce, mix everything, turn off the heat or leave it at very low.
Prepare bolognese sauce
  1. Preheat the pan to medium heat, add coconut oil
  2. When the oil is melted add gluten-free flour, stir
  3. Pour water and coconut cream (or you can simply use 400ml/13.5oz of coconut milk instead)
  4. Add salt, nutmeg and black pepper powder, turn of the heat.

Preheat the oven to 180 C/356 F degrees. Now you just need to put everything in a baking dish, if you need boil your lasagne sheets or as I did, just put them one by one into hot water for a minute. Start with a bolognese sauce, then put lasagne sheets, spread soy sauce on the sheets and start all this circle again. if you want you can add a little bit of vegan cheese on one of the layers. Finish everything with bolognese sauce. Bake for 30-40 minutes

Cashew cheese:

  • 1 cup cashew, soak in water for an hour
  • 1/4 tsp of salt
  • 2 garlic cloves
  • 1 tsp apple cider vinegar
  • 200ml/ 6.8oz of water
  • a little bit of "pizza spices" (dried oregano, marjoram and basil)


Blend cashew nuts and garlic cloves. Add water, apple cider vinegar, salt, "pizza spices" and blend again

The cashew cheese add when you serve lasagne on table
