Amazingly Good Vegan Tortilla ♥

I don't want to be junk food vegan, but... There are some things in life which you just can not resist that easy. Like vegan tortilla. Oh my, if you want to be healthy, don't try it, because it will be much harder to become that healthy vegan, the moment you try this amazingly good vegan tortilla. But if you are not planning to be healthy vegan, go ahead and make it! And than make it again, and again... and again.

There are lots of tortillas you can make, but today I will share with you one of our favorites:

Vegan Tortilla with Soy Mince and vegetables



For the soy mince spices I usually use one of these (or sometimes mix them both), but most of the times I prefer TACO spices.



You will need:
  • mexican spices
  • soy mince
  • 2 garlic cloves
  • tomato sauce
  • oil for cooking
  • jalapeno pepper
  • red bell pepper
  • tomatoes
  • pickles
  • mayonnaise
  • cheese (optional; I used Violife)
  • salad

  1. Prepare soy mince: pour some boiling water on the soy mince, add curry (or chicken) spices, cover it with a lid and leave for 10-15 minutes. Heat the pan, pour some oil, add mashed garlic and mexican spices. If there are some water left, pour it off and fry mince with spices for few minutes. Add tomato sauce, stir, turn off the heat and let it cool.
  2. Add mayonnaise (or mayo sauce) on the tortilla scone. Add salad, soy mince, vegetables and on the top of it add some grated vegan cheese, if you don't have cheese, just add a bit more vegan mayo, but it is not necessary.
  3. Bake in oven for 7-10 minutes on 350 degrees or in special sandwich pan until slightly brown.
