Buckwheat with Soy & Vegetables

I was thinking about what should I post in my blog? What is interesting for me and what can I share with other fellow vegans... I decided, that I will share simple, delicious recipes also lots of home made food replacements, as it is super important for me and I think for you, as well. :)

But today I was about to share with you super simple dinner, and I asked myself, is it really neccasery? Maybe it's too simple... And I remember, when I started my vegetarian life journey nothing was too simple for me. My first meals were without any spices, because I was afraid to use them, that's why I will share with you even recipes like this one, so you can learn how to make quick delicious lunch for you and your family.

Stuffed Vegan Eggplant

When it comes to an eggplant, I don't want to waste your time by talking to much about myself and just go straight to a recipe. Our family loves eggplant, especially my husband, he absolutely loves everything I make with it! Our top recipes with eggplant are Tortilla {but we have it only once in a while, because it contains gluten, the recipe will apear this week}, Eggplant curry and now this new recipe goes to our top list too - Stuffed vegan eggplant.

Creamy pumpkin soup with coconut milk & Organic goodies from our garden

Hey, guys! Today I have to show you two things. One is my organic veggie goodies from my uncle's garden and the other things is amazing pumpkin (which I picked up from my uncle) soup with coconut milk. So... let's start!

All my life I have lived in a small country Lithuania in the middle of Europe. It's very beautiful because of it's nature and all my life I was kind of child of the forest :D my childhood let me to feel the connection with nature, but I didn't always like to help my grampa and parents in the garden, tho. All kids want to play, so work on beautiful summer days doesn't seem as a great thing to do.
