Vegan Chocolate "Lazy Cake" with Cookies!

One of the things what I have really missed since going vegan is milk chocolate and cheese curd dessert. I have already figured out how to make a vegan version of it (recipe here), but I haven't tried to make vegan milk chocolate yet... There are couple stores where I can find it, but I have to purchase it and can't get it right here and now when I crave for it. I hope that I will find or create some great vegan milk chocolate recipes. But now one of my favorite dessert is vegan lazy cake! I don't know if you know this, but in Lithuania it is really popular. It is amazing, and vegan version of it is the best I have ever tried! As it is made of dark chocolate and coconut milk, it reminds of milk chocolate, and those cookies and apricots (!!!) they give it divine taste.

Guacamole: avocado, black salt, lemon juice and garlic blend everything. If you want you can pour a little bit of water (not too much!) and then add cut onion and tomatoes.

Amazingly Good Vegan Tortilla ♥

I don't want to be junk food vegan, but... There are some things in life which you just can not resist that easy. Like vegan tortilla. Oh my, if you want to be healthy, don't try it, because it will be much harder to become that healthy vegan, the moment you try this amazingly good vegan tortilla. But if you are not planning to be healthy vegan, go ahead and make it! And than make it again, and again... and again.

Potatoes with Tofu and Green Beans

Hello, my dear readers! You can't imagine how precious you are to me, how amazing it feels to know, that my work is important for someone :) some lazy vegans, who still want to eat delicious!

And sometimes it is actually great to be lazy, you can create simple, yet amazing recipes, which can surprise you with delicious taste. That's what happened to us, it happens a lot :)

I like to keep it simple. Not only in the recipes, but in life. We usually complicate our life, when we just need to breathe and move on, let go and just live. Today is a rainy day, when I don't see sun I usually feel sad and can't find myself. So I wanted to lighten up my room, I ignited a candle and an interesting incense, which can stand by itself, so I placed it on the new window sill. It was kind a beautiful, but not for long. That incense got really hot and burned my sill and I started to stress out :D that burned place is no more than 0.3 inch and that was enough for me to start to worry... BUT what helped me is breathing, latin music and dancing! Now I feel great, writing here, listening to rain and beautiful music... :)


The recipe of potatoes with beans I want to share with you today is really simple, I wasn't prepared to share it with you, but it was too good to keep it only to myself. :)

I am sorry there is no correct measurements, because I made everything from my heart :) and actually you don't need any. You just can't go wrong with this one. :)

Potatoes with Tofu and Green Beans

You will need ~ :

  • 10 Potatoes
  • 200g Green bean sprouts
  • 150g Tofu
  • 1 Onion
  • 1 Carrot
  • 1 tbsp Dill (I used frozen)
  • 1 tsp"chicken" spices (for tofu)
  • 1 tsp Himalayan salt
  • 2 tsp Cumin
  • 4-5 tbsp vegetable oil
  • water for stewing

Very Delicious Vegan Lemon Cupcakes

Looking through my window and seeing a beautiful peaceful sunset, all nature is relaxed and so am I... everything is so calm and the song sounds in my mind "Summer time and the livin is easy"... :) when the summer is coming I want something fresh and light, something citrus, what would sparkle the colours of summer even more. And I decided to try the new recipe I found - vegan lemon cupcakes (from Naked Cupcakes).. I used to avoid recipes which requires lemon zest, but as I started to learn more about healthy living, I find out some beautiful people, who have a small business of fresh, natural, organic fruits, coming from Spain to Lithuania - sooo amazing! :) so as I got my first lemons and of course I had to do something with them and these muffins definitely goes to my top list.

Eggplant Chinese Curry {vegan}

I have to say, that this week was a real eggplant week, but I can't complain about it because it was really tasty. While in fact, if it wasn't for my husband, eggplant would visit my kitchen less frequently, but as he just loves it - I cook it :) and I always have to come up with something new, so we won't get bored of eating our usual eggplant meals as eggplant in tomato sauce. This time, inspired by Nida Recipe, I made Chinese eggplant and I must say that was very delicious :)

Vegan Lasagne with Soy

It's time to share my extremely great recipe - Vegan Lasagne. I was even thinking about not sharing it on my blog and write it only in my book, which I'm writing write now, but here it is. A gift for all my blog readers. It was the most delicious lasagne of all regular, vegetarian and vegan I have ever tried. And one more bonus for it - it's super simple. If you are here, because you are really lazy vegan, but love to eat delicious, you will like it just as much as I do. :)





My fiance said it's the most delicious lasagne he has ever tried - compliment not only for me, but also for vegan diet. :)

Buckwheat with Soy & Vegetables

I was thinking about what should I post in my blog? What is interesting for me and what can I share with other fellow vegans... I decided, that I will share simple, delicious recipes also lots of home made food replacements, as it is super important for me and I think for you, as well. :)

But today I was about to share with you super simple dinner, and I asked myself, is it really neccasery? Maybe it's too simple... And I remember, when I started my vegetarian life journey nothing was too simple for me. My first meals were without any spices, because I was afraid to use them, that's why I will share with you even recipes like this one, so you can learn how to make quick delicious lunch for you and your family.
