Vegan Spring Rolls have always seemed a bit mysterious for me... I have tried them couple of times, but I have never made them at home. Yet I decited to risk (as I thought) and bought frozen spring rolls sheets. I was afraid that they will be stuck together like one piece, as it was while frozen, but luckyly they were perfect and I was able to separate them easily. I recommend to place it into the fridge overnight before cooking tho.

Vegan Mayonnaise in 2 minutes
Mayonnaise was one of those things for which it was really hard to find a good vegan alternative, especially here, in Lithuania. But maybe we have to thank for situations like this, because only due to lack of variety I decided to make my own homemade veganaise. Before that I have tried raw cashew spread and it is really good, but it can't go with everything, so I started to search for something, that would remind me of original mayonnaise, which is good for sauces, salad and other dishes.
This vegan mayonnaise is very easy and is made with simple ingredients, which can be found in every vegans kitchen.

Potatoes with Tofu and Green Beans
Hello, my dear readers! You can't imagine how precious you are to me, how amazing it feels to know, that my work is important for someone :) some lazy vegans, who still want to eat delicious!
And sometimes it is actually great to be lazy, you can create simple, yet amazing recipes, which can surprise you with delicious taste. That's what happened to us, it happens a lot :)
I like to keep it simple. Not only in the recipes, but in life. We usually complicate our life, when we just need to breathe and move on, let go and just live. Today is a rainy day, when I don't see sun I usually feel sad and can't find myself. So I wanted to lighten up my room, I ignited a candle and an interesting incense, which can stand by itself, so I placed it on the new window sill. It was kind a beautiful, but not for long. That incense got really hot and burned my sill and I started to stress out :D that burned place is no more than 0.3 inch and that was enough for me to start to worry... BUT what helped me is breathing, latin music and dancing! Now I feel great, writing here, listening to rain and beautiful music... :)
The recipe of potatoes with beans I want to share with you today is really simple, I wasn't prepared to share it with you, but it was too good to keep it only to myself. :)

- 10 Potatoes
- 200g Green bean sprouts
- 150g Tofu
- 1 Onion
- 1 Carrot
- 1 tbsp Dill (I used frozen)
- 1 tsp"chicken" spices (for tofu)
- 1 tsp Himalayan salt
- 2 tsp Cumin
- 4-5 tbsp vegetable oil
- water for stewing

Super Easy Vegan Pizza Recipe with Tofu Cubes
This time my blog post will be super short. I just want to share with you guys most easiest, yet very delicious vegan pizza recipe. I can see, that vegans (especially new ones) can't imagine vegan pizza and thinks, that they have to say goodbye for this delicious meal, but... no way! Vegan pizza is just as good or even better than regular (for me homemade pizza is always much more tasty).
Yesterday I was too lazy to make a usual dinner - some stew or rice with soy and veggies, so I just took a frozen pizza crust and made myself a pizza in few minutes :)

Mmm... So good! Eggplant Soup with Coconut Milk
As you may already know eggplant is probably my fiance's favorite vegetable. When we go for a shopping, we quite often bring home even more than 7 of these gorgeous purple veggies. And that's the time when I have to think what should I do with bunch of them, something what would brought joy to my taste, because I fiance could eat the same meal every day, yet I need variety, so I always search and improvise to create something perfect and worth sharing with you. :) This soup is veganized from the lithuanian page Yoga Diet recipe - Eggplant "mushroom" soup, I wouldn't say my soup was similar to mushroom soup, tho.
