Double Chocolate Cupcake Softness

Oh, chocolate... I'm one of those people to whom chocolate is never enough. Almost always when I make cupcakes, cakes or sweets I put in there some chocolate chips, but I have to admit, that some recipes are just perfect the way they are and chocolate would only out shine it's subtle taste.



These double chocolate cupcakes will be perfect for any occasion: for birthday or any other cozy family dinner or simply to have the best sweet breakfast... :) it is super easy to make them and the ingredients are so simple, you can find them in every (vegans) kitchen.



Recipe:

Wet ingredients:

  • 1 cup of soy milk
  • 1 tsp. apple cider vinegar
  • 3/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 tsp vanilla with sugar or vanilla extract
  • 1 tsp mint extract or syrup (you can use any other extract, like vanilla or almond)

Dry ingredients:
  • 1/2 cup wheat flour (you can change it with other flour, about 65g. - 2.3oz)
  • 1/2 cup corn flour
  • 1/3 cup cacao or cerob
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. himalayan salt
  • 100g - 3.5oz black (vegan) chocolate for baking or chocolate chips

Gaminimas

  1. Whisk together the soy milk and vinegar in a large bowl; set aside for a few minutes for the milk to curdle. Add the sugar, oil, vanilla extract, and additional extract and beat until foamy.
  2. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. Mix together all wet and dry ingredients, until no large lumps remain (a few tiny lumps are fine).
  4. For one cupcake I used about 2 tbsp. of batter, so I get 16 cupcakes :) put one tbsp. of batter into a cupcake form, than 4-5 chocolate chips and one tbsp. of batter on them.
  5. Bake for 20minutes on 180C or 350F


P.S. it veeeryyy delicious with some froasting! We ate it with raspberry froasting. Fresh or frozen raspberries mash with tofu (silken tofu should fit the best) and a little bit of brown sugar or agave. I had frozen raspberries mashed with sugar, so I used them, it was devine. :) but it's not a problem if you won't use any froasting, these cupcakes are perfect alone, aspecialy if you eat them with cup of tea or coffee.

These cupcakes will enthrall not only chocolate lovers. You can proudly make them for your family members, colleagues and friends. Everyone will love them and won't even suspect, that this goodness was made without any dairy products, which seems unbelievable for some people, that it is possible to make a delicious dessert without them. :)
